Ingredients:
1 cup white sugar
1 cup brown sugar
3/4 cup vegetable oil
4 large eggs
2 tsp. vanilla
1 1/2 cup cocoa powder
2 tsp. instant coffee or espresso powder
1/4 tsp. salt
1/2 cup chocolate chips, optional
1/2 cup chopped walnuts, optional
Directions:
Preheat oven to 325. Grease a 9x13 baking pan.
Beat oil an sugars in large bowl until well combined
Whisk in eggs until fully incorporated.
Mix vanilla and instant coffee in separate small bowl until coffee granules are fully dissolved.
Add vanilla and coffee mixture to large bowl and beat for about two minutes.
Stir together cocoa powder and salt in a separate bowl.
Add dry ingredients to batter and mix until smooth.
Fold in walnuts and chocolate chips.
Pour batter into prepared pan and bake for about 25 minutes. To check if brownies are done, insert toothpick into center of pan. If toothpick comes out clean, brownies are ready to eat.
Let brownies cool completely before you cut them.
