Serves 8 - 10
Ingredients
1 lb Ronzoni Gluten Free™ Rotini
2 cups green peppers, chopped
2 cups tomatoes, diced
1 ½ cups red onions, chopped
½ lb cubed provolone cheese (optional)
½ lb sliced pepperoni
½ cup black olives, sliced
Dressing Ingredients
¾ cup extra virgin olive oil
¾ cup red wine vinegar
¼ cup granulated sugar
1 Tbs oregano
Coarse salt & fresh ground black pepper, as desired
Directions
Whisk together the dressing until sugar is dissolved completely; set aside. Cook pasta according to package directions; rinse under cold water until cool. Slice the pepperoni circles in half and separate. Toss the pepperoni and chopped vegetables with the pasta. Pour desired amount of dressing over the pasta mixture and toss well. Chill until ready to serve. Add the provolone cheese and any remaining dressing to salad just before serving.
