Cookies:
1/2 cup shortening
1 cup sugar
2 egg yolks that are beaten until light yellow
5 Tbsp. cocoa powder
2 cups of sifted gluten free all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup milk
1 tsp. vanilla
Directions:
Cream the shortening and sugar together. Add in eggs. Sift together the dry ingredients. Add dry ingredients to creamed mixture, alternating with 1 cup of milk and vanilla.
Using a cookie scoop, drop them on a prepped cookie sheet (lightly greased or use parchment paper) and bake to 8-10 minutes at 375 degrees.
Filling:
1/2 cup shortening
2 cups powdered sugar
2 eggs whites, beaten with the mixer until they form peaks
1/4 tsp. salt
1 tsp. vanilla
Directions:
Cream together the shortening and the sugar. Add the salt and vanilla. Fold in the egg whites and mix well. Put filling on the bottom of one cookie, and place the second cookie against the filling to form a sandwich.
