3/4 cup potato starch flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 cup oil
4 egg yolks
1/3 cup orange juice
4 egg whites + 1 tsp. cream of tartar
Directions:
In a bowl, combine flour, sugar, baking powder and salt. Beat in oil, egg yolks and juice. Mix until smooth.
In separate bowl, beat egg whites and cream of tartar until stiff peaks form. Fold the two mixes together gently.
Pour into greased 9" tube or bundt pan. Bake right away. Do not let the batter rest in pan or it will separate.
Bake at 325 degrees for 35 minutes. Turn pan upside down while cooling.
NOTE: For an even "zippier" cake, add 1 Tbsp. lemon juice.
