Serves 4
Ingredients:
1 lb. boneless, skinless chicken thighs
Salt and pepper, to taste
1 bunch asparagus, ends trimmed, cut in half
1 red onion, quartered
non-stick cooking spray
Balsamic Marinade:
1/4 cup balsamic vinegar
1/4 cup cooking oil
1 tsp. honey
2 Tbsp. fresh Rosemary
2 cloves garlic, sliced
1 tsp. dried oregano
Directions:
Preheat oven to 400. Wash and dry the chicken well with a paper towel, season with salt and pepper.
Combine all the balsamic marinade ingredients together in a large bowl. Add chicken, asparagus and onion; toss well to coat
Spray a large baking sheet with non-stick spray. Lay the chicken and vegetables out on the tray in a single layer, so nothing touches each other.
Bake for 20-25 minutes, or until cooked through.
