3 pounds of red potatoes, halved
2 Tbsp. olive oil
5 cloves garlic, minced
1 tsp. dried Thyme
1/2 tsp. dried Oregano
1/2 tsp. dried Basil
1/3 cup freshly grated Parmesan (comes in a glass jar - I used 4C brand)
Kosher salt
Freshly ground pepper, to taste
2 Tbsp. unsalted butter
2 Tbsp. chopped parsley leaves
1 pkg. of pre-cooked peppered sausage, located in the same area as Polska kielbasa, etc.
2-3 boneless, skinless chicken breasts
Large container of heavy whipping cream
1/3 - 1/2 cup freshly grated Parmesan, to taste
Cayenne Pepper
1 large onion, sliced very thinly
1 small pkg. fresh sliced mushrooms
Directions for roasted Parmesan potatoes:
Preheat oven to 400 degrees. Place potatoes in a large bowl. Add olive oil, garlic, thyme, oregano, basil and Parmesan; season with salt and pepper to taste. Gently toss to combine.
Spread potatoes out in a single layer on a lightly greased baking sheet.
Place in the oven and bake for 25-30 minutes, or until golden brown and crisp. Stir in butter until melted, about 1 minute.
Directions for preparing the chicken and sausage:
While the potatoes are baking, place chicken (which has been seasoned with salt and pepper on both sides) into a skillet with olive oil. Brown thoroughly on both sides. While the chicken is browning, slice the sausage into thin disks. When chicken is finished browning, remove the chicken from the skillet and place on a cutting board to be sliced into thin, bite sized pieces. Place chicken in a covered container to keep warm. Add the sausage to brown and slightly caramelize, along with very thinly sliced onion and mushrooms. Once the onion and mushrooms are cooked until relatively tender, Remove from heat and place with the chicken to keep warm.
Directions for Cajun sauce:
In skillet, pour whipping cream and bring to nearly a boil, stirring continuously to prevent sticking or scorching. Add Parmesan cheese to taste and texture preference to make an Alfredo sauce. Add cayenne pepper, a few shakes at a time, until the sauce becomes a very pale orange color. Be careful to not over season! I am guessing that it takes between 1 - 2 Tbsp. but look for the color to be a pale orange.
Preparing the dish to serve:
Once the sauce is thoroughly heated, the potatoes should be done. Remove the potatoes from the oven and assemble the various items on a plate to be served - potatoes, chicken, sausage, onion and mushrooms. Put a light amount of sauce over the meat and potatoes and sprinkle some fresh Parmesan cheese over the top. Serve!
