10 medium squash, cooked and drained
1 medium onion, diced
2 eggs
1 stick butter or margarine
1 cup bread crumbs - or use gluten free bread crumbs to make the dish gluten free
1/4 cup sugar (you may prefer a bit less)
Salt - to taste
Drain cooked squash and onions and put in mixing bowl. Add the beaten eggs, butter, sugar, and salt. Mix well. Stir in 3/4 of bread crumbs and keep rest to sprinkle on top. Put in a sprayed or greased casserole dish and sprinkle with the remaining bread crumbs.
Bake at 350 for 25 minutes or until the eggs are set and browned a bit on top.
