2 1/2 lbs. chicken thighs
1/4 cup lemon juice
1/2 cup melted butter
2 Tbsp. seasoned salt
3 Tbsp. lemon pepper
1 1/2 cups gluten free flour (brown rice or white rice - no xanthan or guar gum included)
Directions:
In a 9x13 dish, melt butter in microwave. Add 1 Tbsp. lemon pepper and 1 Tbsp. seasoned salt. Add chicken, coat thoroughly and allow to sit for 10 minutes. In large bowl, combine flour with 2 Tbsp. lemon pepper and 1 Tbsp. seasoned salt. Take chicken out of marinade and dredge in the flour until covered and well coated.
In preheated skillet, use butter to fry chicken over medium-high heat. Brown chicken and remove from skillet and place on a cookie sheet. Bake uncovered in a 400 degree oven for approximately 15-20 minutes.
