2 cups chicken broth
1 cup diced carrots
1 ½ cups diced celery
8 oz. butter (two sticks)
¼ cup minced onion
½ cup flour
6 cups milk
8 oz. shredded American Cheese (I use Velveeta)
8 oz. cheddar cheese
2 10 oz. pkgs. Frozen chopped broccoli
Heat chicken broth in large stew pot. Add celery and carrots. Cook until vegetables are tender. Set aside. Heat butter in sauce pan – add onion and sautee lightly. Add flour to onion and butter and stir with a wisk. Cook 2 – 4 minutes, making sure that flour and butter are well blended. Add the broth and vegetables and milk. Stir. Add cheese and stir over LOW heat until cheese is melted. (Milk will scorch if your heat is too high). Add chopped broccoli and when heated completely through, serve. This is good with a crusty type of bread and a salad.
