Gluten Free Peanut Blossoms

1 cup peanut butter

1/3 cup brown sugar

1/3 cup granulated sugar

1/2 tsp. vanilla

1/2 tsp. baking soda

1/4 tsp. salt

1 egg

1/3 cup additional sugar, for coating

Directions:

Heat oven to 350. Remove wrappers from Kisses.

Beat peanut butter, brown sugar, granulated sugar, vanilla, baking soda and salt in mixing bowl.

Add egg and beat well.

Shape dough into small balls (about 1 inch). Roll in granulated sugar; place on an ungreased cookie sheet.

Bake 8-10 minutes or until lightly browned. Immediately press a chocolate Kiss into the center of each cookie. Cookie will crack around the edges. Remove the cookie from the sheet to wire rack. Cool completely. Makes 36 cookies.
