Ingredients:
1 or 2 sweet potatoes (I used 1 big sweet potato, so if yours are smaller, I would use 2)
2 medium sized apples
1 packaged fully cooked sausage (any variety you like)
2 T Dijon Mustard or Honey Mustard
1/3 cup maple syrup
1 T honey
Directions:
1. Preheat to 425 degrees.
2. Cut up sweet potatoes into 1-2 inch pieces. Mix on a sheet pan with olive oil and salt and pepper and bake for 20 minutes.
3. Meanwhile, cut up apples and sausage.
4. Mix mustard, syrup and honey together.
5. Once sweet potatoes are done, combine them with the apples and sausage on the same pan.
6. Pour mustard sauce over everything. (You can pour the sauce over the apples and sausage in a bowl separately if you want. Either way is fine.)
7. Bake for an additional 20-25 minutes, until sausage is browned and fruit is cooked.
Serve with your favorite rice or noodles!
