2 cups water
1 cup of rice
1 16 oz. pkg. of gluten free kielbasa, cut diagonally (*** see note below)
1 onion, chopped
1 green pepper, chopped
1 clove garlic, chopped
2 15 oz. cans of kidney beans, drained
1 16 oz. can diced tomatoes
1/2 tsp. dried Oregano
Salt to taste
1/2 tsp. pepper
Cook rice as usual. In large skillet over low heat, cook meat 5 minutes. stir in onion, garlic, and green pepper. Saute until tender. pour in beans and tomatoes with juice. Season with Oregano, salt and pepper. Simmer uncovered for 20 minutes. Serve over rice.
