1 tsp. olive oil
1/2 tsp. black pepper
1 clove mined garlic
1 cup chopped celery
1 cup chopped onion
1 cup low-sodium GF chicken broth
1 loaf corn bread - cut into cubes
1 Tbsp. choped fresh sage
1 Tbsp. chopped fresh parsley
2 apples, peeled, cored, and coarsley diced
1/2 cup golden raisins
Preheat oven t 350 degrees.
In a large skillet, heat the olive oil, add black pepper, garlic, celery, onion, sage &parsley, and saute for 5 minutes. Add chicken broth and remove from heat. In a large mixing bowl, toss together remaining ingredients. Spoon into a baking dish sprayed wth non-stick cooking spray. Cover with foil and bake for 20 minutes at 350 degrees. Remove foil and bake for an addtional 10 minutes in order to brwn. Serve immediately.
Variations: Substitute dried cranberries or chopped pecans.
