Recipe shared by Rusty Freeman (one of Gordon's AMC co-workers).
Ingredients:
1 egg
1 1/2 cups Original Bisquick® mix
1/2 cup milk
3 tablespoons vegetable oil
1 package shredded Cheddar cheese
1/4 pound of Italian sausage ( I use the full package - I think it is a pound
- makes it better.)
1/4 package of shredded mozzarella cheese.
Directions:
1. Heat oven to 400°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.)
2. Beat eggs slightly in medium bowl with fork. Stir in Bisquick mix, milk and oil just until moistened. Stir in the cheese and sausage. Batter should have a bisquick dough consistency. Divide batter evenly among muffin cups. Sprinkle some cheese evenly over tops of muffins.
3. Bake 15 to 20 minutes or until light golden brown. Immediately remove from pan. Serve warm. Wrap and refrigerate any remaining muffins.
Makes 12 muffins or 6 Texas sized muffins.
Tip: To reheat a muffin, microwave uncovered on High about 30 seconds or until hot.
You can also substitute breakfast sausage, ham, turkey, bacon or anything else for the sausage.
