1 cup butter, softened
1 1/4 cup sugar
1 egg
2 tsp. clear vanilla
2 /4 cups all purpose gluten free flour mix
2 tsp. baking powder
Directions:
Mix sugar and butter. Beat in egg and vanilla until light and fluffy. Mix in flour and baking powder. Roll small balls in hands and dip in sugar or rainbow sprinkles. Place on ungreased baking sheets. Bake at 350 degrees for 11-12 minutes or until lightly browned around the edges. Don't over-bake. Cook on rack. Makes 3 dozen cookies.
