3 ripe Haas avocados
1/2 sweet Vidalia onion, minced
1/2 Tbsp. minced garlic, to taste
3-5 fresh Roma tomatoes, or 2 medium vine ripened tomatoes, diced
1 tsp. ground cumin
3/4 tsp. coarse sea salt
Black pepper, to taste
1/2 tsp. cayenne pepper, optional
1 bunch fresh cilantro, slightly chopped
3 Tbsp. lime juice
Scoop avocados out of their skins and remove pits. Place avocados in a large bowl and mash with a potato masher or the back of a large spoon.
Add onion, garlic, tomatoes, cumin, salt, pepper and cayenne pepper and mix together with a fork. Taste and adjust seasoning. Stir in cilantro and lime juice.
Chill 30 minutes before serving.
