1/2 stick butter
1 diced onion
(2) 12 oz packages of GF orzo
2 cups fresh sliced mushrooms
~ 3 cups chicken stock
2/3 cup white wine
1 rounded tablespoon minced garlic
2/3 cup parmesan cheese
1/3 cup parsley
Salt and pepper to taste
*I sauté two chicken breasts in a skillet to add substance, turning it from a side dish to an entrée.*
Cut two chicken breasts into bite sized pieces, sauté in oil.
Once sautéed, add butter, onion, mushrooms and orzo. Cook on medium heat until orzo is lightly browned, about 5 minutes.
Add chicken stock, white wine, garlic. Bring to a boil, stir and turn to low. Cook uncovered until orzo is al dente, approximately 10 minutes.
Stir in parmesan, parsley, salt and pepper.
