2 cups raisins
2 Tbsp. corn starch
1/2 cup sugar
Cinnamon and sugar for top
2 crusts
Put raisins in a pan and add enough water to the raisins. Cook until plump.
Mix 2 Tbsp. corn starch with 1/2 cups sugar and add enough of the liquid from the raisins to make a paste then add to raisins and let come to a slow cook; stir until all is mixed well, then add to gluten free pie crust. Cover pie with second crust and crimp the edges. Make cuts on top and sprinkle with cinnamon and sugar. Bake at 350 for about 20 minutes - until crust is nicely baked and golden.
