1 garlic clove
1 cup fresh blackberries
1/4 cup balsamic vinegar
1 Tbsp. honey
1 tsp. Dijon mustard
Salt and pepper to taste
1/2 cup olive oil
Mixed greens or fresh spinach
Red onion slices
Slivered almonds (or you can use walnuts or pecans)
Extra blackberries
Mince the garlic in a food processor. Add blackberries, vinegar, honey mustard, salt and pepper. Puree until smooth. Scrape down the sides and lid of the processor. Puree once more, but while processor is running, slowly pour olive oil down the feed tube and process for 30 seconds. When completely mixed, pour mixture into a sealing jar or container. Store in the refrigerator until ready to use. Drizzle over mixed greens, top with onion, almonds, extra blackberries and any other toppings your desire. Serve immediately.
