Isachandra cake of cupcakes
For the cupcakes
230 ml unsweetened almond milk
1 teaspoon apple cider vinegar
160 gr all-purpose flour
2 tablespoons cornstarch
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
65 ml canola oil
150 gr sugar
1 1/2 teaspoons pure vanilla extract
1 vanilla bean, split lengthwise and scraped
For the ganache
75 ml almond milk
55 gr semisweet chocolate chips
2 tablespoons pure maple syrup

Wet
1 cup (244 g) soy milk
2 tbsp applesauce or non dairy yogurt or cashew cream or more non dairy milk (applesauce or yogurt work best), ik deed Jogurt, andere keer silken tofu: 35 gr, werkte fantastisch
1 tsp apple cider vinegar
75 g sugar
1/4 cup (56 g) neutral oil
1 tsp vanilla extract
a few drops of almond extract (ja, of Amaretto aroma of rozen aroma)
Dry
187.5 g flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon or pumpkin pie spice
1/2 tsp salt
2 apples chopped small (of ander fruit)
1 tbsp maple syrup (hoeft niet)
1.5 tbsp sugar
Custard
1 cup (236.59 ml) + 1/4 cup non dairy milk
2 tbsp sugar or sweetener
1/2 tsp (0.5 tsp) vanilla extract
2 drops almond extract
a pinch of salt
1 tbsp cornstarch or potato starch
1/8 tsp (0.13 tsp) cinnamon , 1/8 tsp turmeric for color
Heel goede cake-structuur, ook in cakevorm
Voor cake: niet echt geschikt ipv bisquit, is meer cake dus voor kastenvorm. Dan dubbele hoeveelheid en 45-60 min bakken. Uit vorm halen en evt nog eens op z’n kop draaien en de onderkant bakken.
Bake the cupcakes
Preheat oven to 350 F. Line muffin pan with cupcake liners. Spray lightly with cooking spray.
Whisk the almond milk and vinegar in a measuring cup and set aside for a few minutes to get good and curdled.
Sift the flour, cornstarch, baking powder, baking soda, and salt into a large bowl and mix.
Beat together the almond milk mixture, oil, sugar, vanilla extract and vanilla bean in a large bowl. Sift in the flour, cornstarch, baking powder, baking soda, and salt, and mix until no large lumps remain.
Niet te lang, anders wordt het rubberachtig.
Fill cupcake liners two-thirds of the way and bake for 20 to 22 minutes. Transfer to a cooling rack to cool.
Bij cake: 40 min bakken.
For the ganache
In a small sauce pan, bring the milk to a boil and then lower the heat to a simmer and add the chocolate and syrup. Mix with a rubber spatula for about 30 seconds. Turn heat off, continue stirring until the chocolate is fully melted and the icing is smooth.
To assemble
Let ganache cool for about 10 minutes. Dip the top of the cupcake in the ganache and then set them on a cooling rack. Spoon the remainder of the ganache over cupcakes. Let set in a cool room for an hour or so, or place in the fridge to set.

Line a pan with parchment with parchment hanging on the sides. Preheat the oven to 350 deg F (176 C). In a bowl, mix in the wet ingredients for the cake, until the sugar is fully combined.
Mix the dry ingredients.
Fold into the wet until just about combined.
In another bowl, drizzle maple over chopped apples and toss to coat. (Hoeft niet) Add the apples to the batter and fold in.
Pour into the parchment lined pan and even it out. Sprinkle sugar over the batter
Bake at 350 degrees F (175 °C) for 35 to 45 mins (in mijn golden heritage vorm: 50 min). Cool for 10 mins, then remove from pan. Cool completely before slicing. Store on the counter for the day, refrigerated for upto 7 days, freeze (slices) for upto a month
To make cupcakes/muffins: Bake for 22 to 24 mins for regular size muffins.
Custard
Heat 1 cup non dairy milk with the sugar, vanilla extract, almond extract and bring to a boil over medium heat. Add cinnamon or other flavoring as needed. Add a pinch of turmeric for color.
Mix the starch in 1/4 cup nondairy milk then add to the boiling milk. Bring to a good boil and take off heat. Custard will thicken as it cools. (See tips in the post if it doesnt thicken). Serve apple cake slices drizzled with custard
