VEG FISH SAMOSA
Fish samosa is tasty , different and presentable . I have made a simple potato filling but macpuff filling of mixed vegetable with onion , garlic can be made and stuffed in it , to give it a different flavour . Outer crust is same as samosa with maida and suji .

INGREDIENTS
For filling
Potato 2 boiled , salt , red chilli pwd 1/2 tsp , dhaniya pwd 1 tsp , amchur pwd 1/2 tsp , cumminseeds 1tsp, ghee 1tbs
For outer crust
Maida 1 cup
Suji 1/4 cup ,
Oil 1/4 cup , salt , ajwain 1/3 tsp , water , oil for frying also
METHOD
Boil 2 potatoes . Heat 1tbs ghee in a pan . Add 1 tsp cummin seeds , when they crackle mix crushed boiled potatoes with salt , red chilli pwd , dhaniya pwd , amchur pwd . Roast for 2-3 minutes . Filling is ready .
Make dough by mixing 1cup maida, 1/4 cup suji , 1/4 cup oil . Add little water to make dough neither very hard nor very soft. Keep aside for 15 minutes .
After 15 minutes make 3 parts of the dough. Take 1part and roll it in oval shape. Keep 2 tsp potato filling lenghwise in the centre of the oval shape .
Make 5-6 cuts 1/2 inch apart from each other, on both the sides of potato filling little slanting .
Coat the sides of oval shape dough with water . Pick top portion of of the potato filling on one side of the cuts and cover the potato filling from top side making pointed shape mouth of the fish.
Pick from the other side and cover the previous pointed top portion and making the pointed mouth shape of the fish . Now pick top first 1/2 inch cut and cover the potato filling and sticking it on other bottom side.
Similarly pick from other side and cross over previous 1/2 inch stripe. Pick alternately the stripes and cross each other making the jal shape , covering the potato filling.
Now the bottom of fish is left . You can leave it as it is to make single tail or cut the centre piece by making the shape of two tails of the fish .
Prick it well with the fork . The leftover back piece should be little thick or you can paste another small same shape of the dough with the help of little water and then prick with fork .Make shape of eye with single clove on each pointed shape mouth of the fish in the front .
Deep fry in slow flame on both the sides till golden brown . You have to be careful while frying as the tail portion turns so it has to be thick and pricked very well .
