RING MURUKKU
Ring murukku is a so uth indian snack . It is delicious , crunchy and spicy . In south India it is prepared at the time of diwali . As it is made with rice flour , it comes out very crispy , you can store it and enjoy it at tea time .
COOKING TIME 30 minutes [ 1 hour for soaking moong dal ]
INGREDIENTS
Moong dal 1/4 cup [ soak for 1 hour ]
Rice flour 1 cup
Sesame seeds 1 tsp , cummin seeds 1tsp , red chilli pwd 1/2 tsp , salt as per taste , ghee or oil 1tbs , hing 1/4 tsp , water 1 cup
METHOD
Saok moong dal for 1 hour or 1/2 hour in hot water . Drain the water and seive through strainer .
Boil 1 cup water , add 1tbs ghee or oil . When the water starts boiling add saoked moong dal . Mix 1tsp sesame seeds , 1tsp cumminseeds , salt and red chilli pwd as per taste . Add hing also .
Slow the gas and mix rice flour . Switch off the gas and slowly mix everything with the hand . It will be hot . Take out in another pan and then make a dough .
Dough should be like roti dough . If it is thick add little hot water more . Keep it covered with a damp cloth so that dough does not dry while making ring murukku .
Take small dough , roll it with hands on chakla . It should be 1/4 inch round and 5-6 inches long roll .
Cut small piece and make it round , joining it in corners , making it ring shape . Make 8-9 rings same ways . The dough should not be too soft or too hard .
Drop each ring in medium flame , then make the gas slow if you find the rings burning . It takes 3-4 minutes to fry on both the sides . Rings come up on oil when they are done . Take out on paper napkin.
When they are cool , store them in a jar . They can be enjoyed for 10-15 days .
