MANCHOW SOUP [ vedio is at the bottom ]
This chinese soup is healthy and tasty. It has many veggies that's why it is nutritious too . You can add vinegar while serving too .It is a street food in China .Kids love it . It is quick to make .
COOKING TIME 40 minutes
INGREDIENTS
For vegetable stock
Cauliflower 1/2 cup
Cabbage 1/2 cup
Carrot 1/2 cup
Bell pepper 1/2 cup
Spring onion 1/2 cup
For soup
Cabbage 2 tbs
Carrot 2 tbs
Bell pepper 2 tbs
Cauliflower 2 tbs
Soya sauce 1 tbs
Corn flower 2 tsp
Noodles 2 tbs , salt per taste , tomato 1 , corriander leaves 1 tsp , garlic 1 tbs , ginger 1tsp
METHOD
- Boil 1/2 cup each cauliflower ,cabbage , carrot , bell pepper and spring onion in 6 cups of water for 15 -20 minutes .
- After 15 minutes , drain the veggies in a strainer . This water of boiled vegetables is vegetable stock . All these boiled veggies can be used separately . [ make paranthas with it or make another vegetable ]
- Now cut fresh vegetables . [cabbage ,carrot , bell pepper ,cauliflower] You can add mushroom also .
- Put 2 tbs oil in kadai , when it is hot , add ginger and garlic . After 1 minutes add all the freshly cut veggies cabbage , cauliflower, carrot ,bell pepper. Saute for 2 minutes . Add corriander leaves . Add 1 tomato .
- After 1 minute add vegetable stock [only the water ] . Boil for 2 minutes . Add 1 tbs soya souce .
- Mix 2 tsp corn flour in half cup of water without any lumps . Now add this too in the soup . It helps in thickenig of the soup .
- Boil for 2-3 minutes . The soup is ready . [ You can add vinegar according to the taste , it is optional ]
- Fry noodles [get it from market ] in a kadai . It takes only 1-2 minutes .
