GREEN MOONG DAL I DLY
Idlis is a great steamed breakfast or snack item and idly made with green moong dal is full of fiber and potassium . We enjoy fritters made from green moong dal by frying . But to avoid frying , steaming or baking is a better option in our day today life . On days when you want to make something simple , nutritious and filling and in just a tsp of oil or two , these idlis are one of the best option . You can add veggies of your choice . This way you can provide your family with all the nutritional greens and vegetables without guessing what is in their idlis . This is a diabetic friendly version of idly that replaces rice with green moong dal .Adding veggies to the batter improves the nutrient quotient as well as flavour and texture of the idlis . You can serve them with corriander and sweet chutney .
COOKING TIME 30 minutes [ 4 -5 hours for soaking the dal ] SERVES 4
INGREDIENTS
Green moong dal split 1.5 cup
Carrot 1/3 cup
beans 1/3 cup
onion 1/3 cup
curd 1/3 cup
Green chilly [ jalapeno ] 1 tsp , kadi patta 6-7 , salt , red chilli pwd 1/2 tsp , oil 1tbs , sarson 1 tsp
eno 1tsp
METHOD/ HOW TO MAKE MOONG DAL IDLY
Soak split moong dal for 4-5 hours .
Cut carrot , beans , onion or any other veggie of your choice into small pieces .
After soaking for 5 hours , wash the dal . Some of the green skin of the dal will be washed away . Strain in a strainer.
Grind to a smooth paste in a mixie with very little water .s
Mix all the vegetables cut in small pieces .
Add salt and 1/2 tsp red chilli pwd or black pepper .
Make a tempering with curry leaves and green chill [ cut in small pieces ] with 1tsp sarson in 1 tbs oil .
Add the tempering to the batter .
Now mix curd to the batter .
Coat the idly moulds with the oil .
Put 1 tsp eno in the batter [ mix eno when you are ready to cook the idly ].
Pour batter in each mould .
Steam for 12-15 minutes .
After steaming for 12 -15 minutes , check with a fork or tooth pick that it comes out clean from the idly . If it is clean switch off the gas and let it remain in the idly stand for 10 minutes .
Take out with the help of a knife and serve with green and sweet chutney

STEP BY STEP OF MAKING GREEN MOONG DAL IDLY
Soak split green moong dal for 4-5 hours . It takes longer time to soak in winters .
Cut carrot , beans ,onion [ You can skip onion if you dont eat it ] or any other vegetable of your choice .
After soaking , wash the dal . Some of the green skin of the dal will be washed away . Let it be .
Strain the dal in a strainer and grind it to the smooth paste with 1-2 tbs of water .
Mix all the cut vegetables to the batter .
Add salt and pepper [ You can use red chilli pwd or black pepper] .
Cut curry leaves and green chilli into small pieces .
In a tempering pan , put 1 tbs oil . When it is hot, add 1 tsp sarson . When sarson is spluttering mix green chilli and curry patta and switch off the gas.
Mix this tempering to the batter .
Now coat the idly moulds with little oil .
Mix 1 tsp eno in the batter . You should mix eno when you are ready to steam idlis .
Steam the idlis for 12 -15 minutes on high flame .
After steaming check by poking a fork or a tooth pick . IF it comes out clean , idlis are done . If not then steam 3-4 minutes more and then check .
When they are done , let it cool in the stand for 10-15 minutes .
Take them out and scoop out with the help of a knife .
Relish the idlis with green chutney , sauce and sweet chutney .
