MEDU VADA
Most south Indians consider their breakfast in complete without the Medu Vada . Whether they have idli , dosa ,or upma , they like to add a crispy , tasty and protein rich urad dal vada to the platter . Serving them fresh with sambar and coconut chutney however is doubly delightful . The word medu in Medu vada , literally means soft in kannada language , basically this word is attached to the dish , to describe softness yet the crispiness it has . However it is also referred with other names in south India like ulundu vadai in tamil , garelu in telugu and uzhunnu vada in malayalam . These days it is served by dipping in sambar too . The recipe is mainly prepared by soaking the urad dal for 3-4 hours which is grounded to smooth paste , it is later flavoured with ginger , green chilli , corriander and curry leaves , further shaped to doughnuts and deep fried in hot oil until golden brown and crisp .
COOKING TIME 30 minutes [ 3 hours for soaking urad dal ] SERVES 5
INGREDIENTS
Urad dal 1 cup
Green chilli 1-2 cut in small pieces , ginger 1' grated , curry leaves 5-6 , corriander leaves 1 tbs , hing 1/3 tsp , salt , oil for frying
METHOD
Soak urad dal for 3 hours . Drain the water after soaking and grind it to fine paste in the mixie with very little water .[ 3-4 tbs water ] It should be like smooth thick paste .You can add curry leaves while grinding .
Transfer the paste to big pan . Beat and mix the batter in circular motion with the hand till it becomes light and fluffy .
Add grated ginger , corriander leaves, hing and salt . Mix batter again .
Heat the oil in a kadai . Keep a glass of water to wet your hands .
Now wet your hands and take small dough and make it round , slowly shape the edges and make a hole in the center and drop in medium flame .
Deep fry on both the sides till they turn golden brown and crisp .
Serve with coconut chutney and sambar . You can soak in sambar for 15 minutes and then serve too . You can relish it with green and sweet chutney if you do not want to make sambar and coconut chutney .
