PALAK PANEER
Palak paneer is one of the most loved north indian dish that is eaten with roti , parantha , naan, rice .It is easy and quick to make .Palak is loaded with nutritients and low in calory. Dark leafy vegetable like spinach is important for skin , hair and bone health They also provide protien , iron , vitamins and minerals .Paneer is a feast and delight for the vegetarians . I always make fresh paneer at home and store in the fridge . It is so simple to make . In 1 kg full milk after boiling add 1/2 cap of bottle cover of clear vinegar or 2 tbs lemon juice or 1 cup curd , when you find green water separating in the milk it is curdled . Seive through thin cloth or nylon paneer chalni [ i use paneer nulon chalni ] . Keep it for 1/2 an hour and then take out from chalni and keep in little water in the fridge . It remains fresh for 2-3 days . Home made paneer is always tasty and fresh and gives very good flavour to the vegetable. .
COOKING TIME 30 minutes SERVES 4
INGREDIENTS
Palak 1bunch 250 gm
paneer 200 gms
tomato 2 grated , onion 2 , garlic 5-6 make gravy in the mixie of both onion garlic , 1 greenchilly
salt , red chilli pwd 1/2 tsp , turmeric 1/2 tsp ghee or oil 1tbs , 2 tbs milk [ cream , malai optional ]
METHOD
Wash and boil palak in 1 glass water for 1 whistle only in a cooker . Cool and blend the palak with green chilly in a mixie
2 Make paste of onion garlic in mixie ,. you can add 1tbs water to it . Either grate 2 tomatoes or make paste in mixie separately .
3 In a kadai put 1 tbs ghee or oil , add grated ginger and onion garlic paste 1/2 tsp cummin seeds . Roast for 3-4 minutes . Add tomato puree and roast again for 3-4 minutes . Add salt , red chilli pwd , turmeric and mix well .
4 Add palak puree and roast for 5-6 minutes . You can add 1-2 tbs milk . You can add malai or cream also it is optional while serving . Add paneer cubes and mix . Palak paneer is ready .
You can cook palak paneer without onion garlic also . Just roast the tomato gravy . Add 1 tbs besan to the palak gravy and roast . Add 1-2 tbs curd to the gravy also . You can add malai and cream also to this palak paneer .
BLANCHING PALAK
If you want to blanch palak instead of boilin in the cooker . Keep 2 glasses water to boil with salt . When the water starts boiling add washed palak leaves and let it boil for3-4 minutes . Switch off the gas and drain the water and run the spinach in the running water and then make paste with the 2 green chili . The colour of palak remains light .
