ALOO METHI
Aloo methi is considered a winter day to day vegetable . In winters we get good quality of green vegetables especially methi . You can make gajar methi , methi parantha , matar methi malai and aloo methi and many more methi dishes . Methi is bitter but it tastes good with potato and carrot . To lessen the bitterness add salt to the methi leaves and after 10 minutes squeeze the methi leaves to take out any water from them.

INGREDIENTS
Potato 2 big
Methi 1 cup [ washed and cut ]
Salt , haldi pwd , red chilli pwd , dhaniya pwd , cummin seeds , amchur pwd , garam masala , oil 2 tbs
METHOD
Cut potato in medium small pieces . Wash and cut methi leaves and mix 1 tsp salt in it .
In a pan or kadai put 2 tbs oil . When it is hot add cummin seeds . Add washed and cut potatoes . Sim the gas .
Cover it for 5 minutes . After 5 minutes stir potatoes and add salt , red chilli pwd , haldi and dhaniya pwd .
After 5 minutes more , squeeze the methi leaves which are mixed with salt to take out the water . The salt helps in leaving the bitterness of methi leaves . Add the squeezed methi leaves with the potatoes . Stir them .
If the potatoes are sticking to the pan , add 1 tbs water . Again cover .
After 5-7 minutes when the potatoes have become tender add amchur pwd and garam masala . Mix well .
Switch off the gas.
SERVE ALOO METHI WITH PARANTHA , ROTI OR MATHI
