RASGULLA
Rasgulla is a soft and spongy cheese balls in light and sweet sugary syrup. It is a traditional and easy to make Bengali sweet that popularly can't go wrong with .Rasgulla or Roso golla , in local dialect actually originated from Orissa and as with many other Indian sweet and dessert recipes , requires only three basic ingredients milk , sugar and lemon juice which are easily available in any Indian kitchen all the time .Before I tried making Rasgulla at home , I always thought it is hard to make and time consuming sweet, that needs too many ingredients . When I tried making at home ,then I realized it is quite simple and easy to make at home and takes only 30 minutes to make .
COOKING TIME 30 minutes SERVES 6
INGREDIENTS
Full cream milk 1/2 kg
Cow milk 1/2 kg [ you can take 1 kg cow milk only if you do not have full cream milk ]
lemon juice 3 tbs
METHOD
- Boil both the milk . Switch off the gas . Add lemon juice and stir . You will see milk separating and green water with the curdled milk. If milk is not separating , add more lemon juice or 1tsp vinegar.
- Seive through a muslin cloth and wash twice in plain water to remove lemony taste , squeeze and hang over a tap for 25 minutes to remove water .
- Now take out in a broad pan and knead with palm for 10 minutes until it become smooth and soft texture. It should become like a soft dough .
- Roll the chenna into small balls without any cracks , it will expand after adding it to the sugar syrup .
- Put 1 cup sugar in 5 cups of water in a broad cooker . When the water starts boiling , add the balls . Close the cover without the whistle on high flame . After 5 minutes open the cooker and stir the balls and close again without whistle for 7 minutes on high flame . [ you can steam for 8 minutes directly without opening the cooker for stirring ]
- After 7 minutes switch off the gas . Open the cooker and let rasgulla remain there for 10 minutes .
- Rasgulls are ready , now take them out carefully in other pan , cool them in the fridge and serve .
