SOUTH INDIAN DAHI VADA [ vedio is at the bottom ]
When we go to Sagar Ratna we first order its dahi vada which is very soft and yummy . This dahi vada can be easily made at home . It does not need any sweet chutney because we sweeten the dahi . It does not take much time too . I always make it on occasions and when some guest is coming for lunch or dinner.
COOKING TIME 1/2 hour , For soaking dal 2-3 hours
INGREDIENTS
White urad dal 1 cup [soak for 2-3 hours ]
Dahi 1/2 kg
Salt per taste , sugar 4-5 tsp , oil for frying
METHOD
- Wash and soak dal . After 2 hours grind it in mixie with only 1tbs water .
- Whisk it well mixing 2-3 tsp of water in pithi for 5 minutes . It should be fluffy and soft . Add salt .
- Heat the oil . Take a wet handkerchief or thin cloth and with wet hand pick 1 tbs pithi and put on wet cloth , make a hole in the centre and drop in the hot oil .Similarly drop 4-5 pieces in oil . Fry till golden brown. Soak them in water.
- Whisk dahi in mixie or with hand mixer . Add salt and sugar . It should not be thick .
- Squeeze out vada one by one and drop in dahi . Keep in fridge .
- After 2 -3 hours take out from fridge and serve as it soaks the dahi and vada becomes soft .
- Take out one by one in tray and put tadka of sarsons and green chill in 1 tbs oil [Tadka is optional ] on them .
