AAM PANNA
Aam panna is a summer cooler made from unripe green mangoes . It is made when mangoes make their appearance in the hot indian summers . Aam panna has a tangy , sweet taste with hints of roasted cummin and black salt . Additon of these spice powders and black salt not only brings in more flavours but also helps in digestion . It prevents the body from getting heatstroke and keeps it cool .Raw mangoes are rich in vitamin c and iron . Panna helps in preventing stomach problems in the summers and it is good for digestion .
COOKING TIME 30 minutes SERVES 4-5
INGREDIENTS
Raw mango 1 medium
sugar 3/4 cup
salt , black salt 1/2 tsp , roasted cummin pwd 1 tsp , few mint leaves are optional
METHOD
- Boil raw mango with 1 glass of water . There are 2 ways of boiling either with skin or without the skin .
- I have peeled the skin off and cut the raw mango in the pieces and take out the guthli apart . Then boil with 1 glass of water .
- Cool it and pour the boiled raw mango in the mixie with the same water . Add 3/4 cup sugar , salt . black salt and mix well in the mixie . Add 1 glass water more to the concentrate . Add roasted cummin pwd . Panna is ready . Serve with ice and mint leaves .
- Making aam panna with the skin . Boil with 1 glass of water . Skin of raw mango loosens after boiling . After cooling peel the skin and take out the pulp and remove the guthli . Add pulp with the boiled water and sugar in mixie and add spices . Add water and ice . Panna is ready .
- For boiling the raw mango , boil like potatoes .
- Sugar , water and spices you can add or reduce as per taste
