RICE POWDER UTTAPAM
Every body loves south Indian food .Idly , Dosa and mix vegetable uttapam are a treat at breakfast time or any time of the day . If they are served with coconut chutney and sambar , it is a healthy and perfect filling tasty food. Whenever I make dosa , I make extra batter so that uttapam is cooked next day with lots of vegetables . This recipe of uttapam is made with rice flour so it is quick and easy . Rice flour is light for stomach and very healthy. I have added suji also but it can be made without suji also .
COOKING TIME 30 minutes SERVES 2
INGREDIENTS
Rice powder 1cup
Suji 1/2 cup
Curd 1/2 cup
Tamato 1/3 cup , bell pepper 1/3 cup , carrot grated 1/3 cup , onion 1/3 cup , salt , oil for raosting
METHOD
Cut tomato , bell pepper and onion in small pieces and grate carrot .
Take a bowl and mix 1 cup rice powder , 1/2 cup suji and 1/2 cup curd . Mix 1 cup water to make thick batter . You can mix water as needed . Add all the vegetables . you can add as per taste .
Add salt and red chilli pwd or green chilli according to your taste . Keep aside for 10 minutes .
Heat a non stick pan . Put 2 tbs oil when it is hot, pour 1.5 tbs batter on it and spread it in round shape. Keep it thick.
Cover it and keep the gas low or medium . After 3-4 minutes when the bottom is brown in colour , turn it over , you can keep the gas on medium flame . It takes 2-3 minutes more .
You can serve with sambar and coconut chutney or with any sauce.
