KATORI CHAT
It becomes really presentable if chat is served in katori which you can make at home with the papadi dough. We can prepare the katori mould 2-3 days in advance. It can be kept for 10 days . The filling can vary with moth, boiled chana and potato. We can fill moong dal pakori or vada too ,

INGREDIENTS
For Katori
Maida 1 cup
Oil 1/4 cup
Salt 1 tsp , water as need ,small steel katori 1 , oil for frying
For filling
Moth [optional ] , potato and chana [ both boiled 4 Tbs
Green and sweet chutney 1/2 cup each
Curd 1 cup
Bhujia , pomegranate, raita boondi , onion [optional ] ,tomato and corriander leaves , salt ,chat masala in small quantity.
METHOD
- For katori mix maida ,oil and salt in a bowl. Add water slowly and make roti type dough. Keep aside for 15 minutes.
- Now make small balls of dough. Take 1 ball , roll it thin in round shape Coat the steel katori with little oil outside the katori .Put katori in centre of circle .
- Wrap the katori from all the sides .If it exceeds the top of katori outside cut the piece out. Now prick the covered katori with fork. on all sides and down .
- Heat the oil , when it is medium hot leave the katori straight in the kadai , now the flame should be slow.
- In 1 minutes it starts leaving the steel katori . Take out steel katori with a chimta [tong ] . Turn maida katori in the kadai upside down .It takes only 2 minutes to fry the maida katori on both the sides. You can make maida katori with only 1 steel katori.
- Wipe the steel katori little with a cloth .,Roll next ball and keep the steel katori in centre and wrap the same way.
- Similarly make katories. Store in a jar .
- For filling ,fill the maida katori with moth ,potato and chana or potato and chana.Pour curd ,sweet chutney ,green chutney as per taste . Sprinke litle pomegranate , boondi and chat masala as per taste. You can add tomato and onion cut in small pieces .
SERVE THE KATORI AND RELISH
