MANGO SHRIKHAND
Mango shrikhand is a traditional Gujrati and Maharashtrian recipe . It is very simple and easy to make especially in summers when it is a mango season .Made with hung curd , fresh mango puree . It's served as dessert or side dish with puri .It is a basically an assortment of silky smooth curd and crunch of dry fruits .Mango dessert would surely delight your guests if you serve them this dish as a dessert . Mango puree can be used with hung curd in the off season .
COOKING TIME 20 minutes [ 3-4 hours for hung curd ] SERVES 5
INGREDIENTS
Thick Curd 2 cups
Mango puree 1 cup
Sugar 1/ 2cup pisi , Pinch of cardamom pwd optional , nuts , few pieces of mango
METHOD
Hung thick curd [ readymade 400 gm box of motherdairy can be used ] . It should be hung for 3-4 hours in muslin or thin cloth .Drain water completely [ you can drink like chach ].
Make puree of 2 medium mangoes in the mixie without water . Add hung curd and ground sugar and whisk well .
Take out in a bowl and add cardamom pwd . You can add kesar mixed in 1/2 tsp milk, if you have it .
Chill it in the refrigerator .
Serve with nuts and mango pieces [ You can roast almonds in 1 tsp ghee for 2 minutes and the sprinkle otherwise plain nuts tastes good too ] .
