WEAVE SAMOSA
Weave samosa is a jali shaped samosa which is filled with spiced potato . It is so attractive and presentable that you can not resist it . You can fill it with aloo matar dry vegetable with spices of your choice .

INGREDIENTS
For filling
Potato 2 boiled
cummin seeds 1 tsp , red chilli pwd 1/2 tsp , dhaniya pwd 1tsp , amchur pwd 1/2 tsp , garam masala 1/2 tsp , oil or ghee 1tbs , salt , oil for frying
For outer crust
Maida 1 cup , oil 1/4 cup , salt , ajwain 1/4 tsp , water
METHOD
- For filling boil potatoes . In 1 tbs oil or ghee add cummin seeds. When they crackle add boiled and crushed potatoes with salt , red chilli pwd , dhaniya pwd , amchur pwd and garam masala . Roast for 3-4 minutes . Filling is ready .
- You can make dry aloo matar vegetable also with the spices for the filling .
- For the outer crust , add 1/4 cup oil in 1 cup maida with salt and ajwain . MIx water and knead dough . Keep aside for 10 minutes.
- Take parantha size dough and roll it in round shape . Cut it in square or rectangle shape . Divide it into 2 or 3 parts , each 3 inches wide and lengh should be 7-8 inches. Take 2 pieces and keep in a cross shape . One overlapping other in the centre .
- Keep the third length aside to use later . Fill the centre point of these crossed 2 pieces with 1 tbs of the potato mixture .
- Pick north side and cover the potato mix and stick it to the bottom wit water . Take the east side and overlap the previous one over the potato mix and again stick this one also to the bottom .
- With the rest of two sides , cut and make 5-6 stripes each with the knife . The base should not be cut . Coat these stripes also with water on the tip sides .
- Now pick one stripe from south side and cover the already covered potato mix . Take other stripe from west side and cover the previos one . Next pick south again cover on the side of previous one making jali . Next do it with east side .
- Pick alternately and stick to the bottom other side making and weaving like jali . Stick all 5-6 stripes each from both the south and east side . Put water and join the finished corners if they are wide .
- Raw weave samosa is ready . Weave the rest of the samosa with the dough .
- Fry for 2-3 minutes in hot flame and take them out . You can keep in the freezer and refry them at the time serving after defrosting them .
- If serving the same time , refry on medium gas for 4-5 minutes till golden brown .
