Sham savera is green colour part of vegetable is sham means evening and white colour part of vegetable is savera means morning. It is actually palak kofta filled with paneer in tomato gravy . It is quite presentable and tasty too.
COOKING TIME 1/2 hour
INGREDIENTS
Palak 300 gms
Paneer 100 gms
Besan 1/2 cup , bread slice 1/2 slice
Tomato 3 , Tomato gravy [readymade ] 1 tbs , salt per taste , cummin seeds 1 tsp , red chilli powder 1/2 tsp , haldi powder 1/2 tsp , dhaniya powder 1 tsp , oil for frying
METHOD
- Wash and boil palak in open pan without water . It takes 5 minutes only to boil . Cool and squeeze out palak . Mix in mixie without water. Add besan and bread slice to it . Add salt to it . It should be like soft dough .
- Make round balls of crushed paneer mixed with salt . Leave 1 tsp paneer for gravy aside . Make covering of paneer ball with palak dough . It will be palak kofta filled with paneer .
- Deep fry kofta on medium gas .
FOR GRAVY
- Make tomato puree of 3 tomatoes in mixie without water . Put 1 tbs oil in kadai on gas . When it is hot add cummim seeds .Add red chill ipowder and haldi . Now add tomato puree . Fry it for 5 minutes , add [ ready made ] tomato gravy too .
- Add salt and corriander powder ,Fry for 5 more minutes on high gas . Mix 1 tsp crushed paneer to thicken the gravy . Fry for 2 minutes more . Add 1/2 glass water and boil for 5 minutes . The gravy is ready .
- If you want to use onoion and garlic to the gravy , you can take 1 onion and 2-3 cloves of garlic and mix them with 3 tomatoes in mixie and make puree and the method of making gravy is similar.
- Take a shallow dish . Pour hot gravy in it . Cut palak kofta in half and keep in gravy only dipping the sides of half kofta . the white part should not be dipped in gravy .The colours of green palak kofta with white paneer filling in red gravy looks presentable .
- If koftas are cold , heat them in microwave and then put in the gravy .
