PALAK PATTA CHAT
Palak patta chat is crispy ,easy and tasty chat . It is different from other chat. These days you can sometimes find it in wedding chat corner counter too. Palak chat can be made in fasts too as we can use vrat atta instead of besan.
COOKING TIME 20 minutes
INGREDIENTS
Palak 8-10 small palak leaves
Besan 1/2 cup
Dahi 100 gms thick , sweet chutney 2-3 tbs , green chutney 2 tbs , [ pomegranate 1/2cup optional ] , salt per taste , red chilli powder 1/3 tsp , roasted cummin powder 1/2 tsp , oil for frying
METHOD
- Wash palak leaves . Leaves should be in good condition . They should not be torn . Add water in besan . It should not be very thick or thin [ should be like pakori paste ] . Add salt and red chilli powder and keep aside for 10 minutes .
- Heat oil in kadai .Take 1 leaf of palak , coat it with besan mix and deep fry for 1 minutes from both the sidesways . Put 4-5 leaves at a time in kadai . Take out soon from kadai as they have to be fried again at the the of serving .
- Fry each palak leaf and keep it . You can refry after 7-8 hours .
- If you want to serve at the same time then also you have to refry again . Twice frying makes palak leaves crisp .
- Whip dahi , it should be thick . Add salt , roasted cummin powder to it .
- For serving take 2-3 refried leaves in a plate . Pour little dahi on each leaf , drop sweet chutney and green chutney . Sprinkle pomegranate over the chat .
