Palak Patra Recipe / Tasty Patra of Healthy Palak
Palak Patra is a nutritious and a delicious snack . Patra is a maharashtrian and gujrati dish and it is a snack with nutrients . Genarally we make patra with arbi ke patte or colocasia leaves . These leaves we get in the monsoon season only . But with palak leaves we can make patra any time of the year as palak is available whole year round . This patra is presentable and easy to make . So let's start our recipe .
COOKING TIME 40 minutes SERVES 4
INGREDIENTS
Palak 1 small bunch with big leaves
besan 1. 5 cup
ajwain 1/2 tsp , ginger green chilly paste 1 tsp , haldi 1/2 tsp , red chilli pwd 1/2 tsp , dhaniya pwd 1 tsp , hing 1/3 tsp , sesame seeds 1 tbs , gur grated 2 tbs [ less can be taken ] , lemon juice 1 tsp , 1 tbs oil
for tadka
mustard seeds 1 tsp , kadi patta 7-8 , sesame seeds 2 tbs , 2-3 tbs oil
METHOD OF MAKING TASTY HEALTHY PATRA WITH PALAK
pick palak leaves and wash them .
wipe them with a cloth .
cut the thick stem from the centre of each palak leave .
take besan in a bowl .
add ginger chilly paste , haldi , red chill pwd , dhaniya pwd , salt , hing , ajwain . mix them .
add grated gur , oil . [ add sesame seeds also , it is optional as we add sesame seeds seeds at the time of roasting ]
mix and add less water to make thick batter .
add lemon juice .
the batter should be thick so that palak is coated with the hand only .
take 1 big leaf and coat besan batter all over it .
keep another big leaf over it [ reversing the top with the bottom side ]
coat the second leaf with batter again .
keep the third leaf and fourth leaf one by one and coat with the thick besan batter the same way .
after 4 leaves , fold from the sides first and coat the sides with besan also .
start folding from the top and make a tight wrap care fully .
coat on the rolled top also .
make more palak rolls similar way .
if you have small palak leaves , you can spread 1 big leave first then spread 2 small leaves side by side over single leave , then another 2 small leaves over them then start rolling carefully after coating them with besan batter .
make all the rolls .
now you have to steam them . for steaming i have used idly cooker , coat the plate with the oil , keep rolled palak rolls and cover the idly cooker , you can steam in kadai [ by putting water in the kadai . put a jali in the water to keep a oil coated plate over it to steam and cover]
steam for 12 to 15 minutes .
after 12 - 15 minutes check by putting a fork in them , if they come out clean they are done .
take them out in a plate and cool them .
after cooling them cut them at half inches distance .
you can store them them in the fridge , to serve after 2-3 days . roast them at the time of serving .
for roasting put 2-3 tbs oil in the pan , when it is hot add mustard seeds ,
when they crackle add kadi patta .
add palak patra pieces . add sesame seeds also .
roast from both the sides till crisp on low meduim gas .
roast for 3-4 minutes from both sides .
they should be crisp .
serve them with green chutney or tomato sauce .
palak patra tastes delicious and yummy without any chutney .
STEP BY STEP OF MAKING TASTY AND HEALTHY PAwa
wash palak leaves and wipe them .
cut the thick centre stem of each palak carefully .
put besan in a bowl .
add all the spices red chilli pwd , haldi , dhaniya pwd , hing, ajwain and salt .
add 1tsp ginger chilly paste .
add grated gur and 1tbs oil also .
mix water slowly to make thick batter and with no lumps .
add lemon juice of half lemon .
spread 1 big palak leaf and coat besan batter all over it with your hand .
put second palak leaf over the first besan coated leaf upside down .
spread besan batter the same way .
put third and fourth leaf the same way .
start folding from both the sides and put batter over the folded leaves .
to make the roll , start rolling from the top and make a tight roll carefully .
make rolls with remaining palak leaves and besan batter .
to use small palak leaves , take 1 big leaf , coat besan batter and then keep 2 small leaves side by side over besan coated leaf . coat batter and again put 2 small leaves side by side , coat again with batter and then make a roll.
make all the rolls and coat batter on top of each roll .
you have to steam them , I have steamed in idly cooker by coating the plate with oil and keeping the rolls on the oil coated plate and cover .
steam for 12 -15 minutes . [ you can steam in a kadai by filling it with water and keeping a jali in the water . keep a oil coated p;ate over jali , keep rolls over it , cover and steam ]
after steaming , check by putting a knife or fork in the roll , if it comes out clean then it is done .
cool the rolls and cut in 1/2 inch size .
you can store them in the fridge for 2-3 days and then roast .
for roasting put 2-3 tbs oil in the pan , when it is hot , put mustard seeds and kadi patta .
add palak rolls . add sesame seeds also .
roast for 3-4 minutes on both the sides on low meduim gas till crisp .
enjoy crispy healthy palak patra with any chutney . it tastes delicious and tasty without any chutney also .
