Mooli Muthia / Radish Muthia / Steamed Radish Dumpling
Muthia is a traditional Gujrati snack prepared by steaming dumplings made with a spiced mixture of flours and vegetables . Mooli Muthias has a unique flavour and taste . Radish or Mooli is a winter vegetable and very healthy so we should cook tasty and healthy snack and can be made ahead of time , warmed and served as required . Serve the crispy tasty muthia with any chutney . Let's start the recipe .
COOKING TIME 30 minutes SERVES 5
INGREDIENTS
Mooli / Radish 1 big one grated
Mooli leaves 2 cups washed and cut
besan 1/2 cup
Atta [ wheat flour ] 1 cup
oil 1 tbs for the dough and 2 tbs for roasting
green chilly and ginger paste 1 tbs , sesame seeds 1 tsp , haldi 1/2 tsp , red chilly pwd 1/2 tsp , dhaniya pwd 1/2 tsp .
1-2 tsp sugar , lemon juice 1tsp , salt as per taste
For tadka 2 tbs oil , mustard seeds 1 tsp , sesame seeds 1 tsp , kadi patta 7-8
METHOD OF MAKING TASTY MOOLI / RADISH MUTHIA
take 1 big radish and grate it .
take 2 cups of radish leaves and cut them finely .
mix them in a bowl .
add 1 tbs green chilly paste or crushed [ ginger 1' , green chilly 1-2 ]
add sesame seeds , haldi , red chilly pwd , sugar , lemon juice and salt .
add 1 tbs oil . [ you can add 1-2 tsp sugar and 1 tsp lemon juice ]
mix 1 cup atta and 1/2 cup besan .
mix everything and knead a dough . you can add more besan or atta if dough is very soft .
coat hands with little oil and make 4 rolls .
take a steamer or idly cooker or a kadai .
put rolls on a greased plate and keep in the idly cooker or kadai or steamer . [ for kadai put water the kadai , keep a jali and put a greased plate and keep all the rolls , cover ]
steam for 12 - 15 minutes . check with a fork or knife , if it comes out clean , then they are steamed ]
take out from idly cooker and cool them .
cut them into slices , [ you can store them in the fridge to roast them later ]
for roasting , put 2tb oil in a pan .
put mustard seeds , kadi patta .
add sesame seeds and muthia pieces .
roast them on both the sides till they are crisp and little brown .
serve tasty healthy crispy mooli muthia with green and sweet chutney .
STEP BY STEP OF MAKING TASTY CRISPY MOOLI / RADISH MUTHIA
take 1 big radish and grate it .
take 2 cups radish leaves cut finely .
mix them in big bowl .
add 1 tbs ginger chilly crushed or paste [ ginger 1' , green chilly 1-2 ]
add 1tsp sesame seeds , red chilly pwd 1/2 tsp . haldi 1/2 tsp , dhaniya pwd 1/2 tsp , sugar 1-2 tsp , lemon juice 1tsp , salt as per taste , 1 tbs oil . [you can add 1-2 tsp sugar and 1tsp lemon juice ]
mix 1 cup atta and 1/2 cup besan .
mix every thing and make a dough [ you can add more atta or besan to make a dough ] [ you can add rice flour also ]
coat your hands with oil and make 4 rolls .
for steaming , coat a plate with oil and steam in idly cooker or steamer or a kadai .[ for kadai put water in the kadai and keep a jali in it . put oil coated plate over jali and cover ] .
keep all the rolls and steam for 12- 15 minutes on high flame .
check with a fork or knife , if they come out clean they are done .
take out and cool them .
cut the slices at 1/2 inch distance .
for roasting put 2tbs oil in a non stick pan .
put mustard seeds to crackle . add kadi patta and sesame seeds .
put the pieces to roast on both the sides on medium flame .
roast them till they are golden and crisp .
serve with any chatni [ they taste good even without any chatni ]
