MINESTRONE SOUP [ vedio is at the bottom ]
Minestrone soup is a Italian tomato mixed vegetables soup . It is very healthy also as it is made with zucchini , carrot and any vegetable you like, you can add . Spaghetti , rajma or lobhia is added as toppings .
COOKING TIME 30 minutes SERVES 4
INGREDIENTS
Carrot 1 [ cut in small pieces ]
Zucchini 1/2 { cut in small pieces ]
Tomato 1 , tomato gravy 1 cup , salt , oregano , celery 1 [ optional ] . rajma or lobhia 1/2 cup ,
spaghetti 1/2 cup [ boiled ] , garlic 1tsp , onion 1 [ cut in small pieces ]
METHOD
- Boil rajma . Break spaghetti and boil in hot water with 1 tsp oil like pasta. When it is boiled , strain in a strainer and put tap water on it so that it doesn't stick to each other ,
- Put 1tbs oil in a pan , roast 1 tsp garlic . Add 1 onion [ cut in small pieces ] . Mix carrot and zucchini . Add tomato [ cut in small pieces ] . Roast for 2-3 minutes . Add 1cup tomato gravy [ readymade or home made ] . Add salt .
- Mix 1/2 glass water . You can add more water . Boil till vegetables become tender .
- Lastly add 1 tbs boiled rajma and 1 tbs boiled and cut spaghetti .
- For homemade gravy , boil tomatoes only for 1 whiste . Make paste in mixie after cooling . Strain in strainer and fry for 4-5 minutes in a pan . The homemade tomato gravy is ready .
- SERVE MINESTRONE SOUP WITH CHEESE GRATED AND CELERY [ cut in small pieces ]
