RAGDA PATTIES
Maharashtrian dish ragda patties is yummy and filling chat. This can be called a matara tikki chat
Serves 4
Matara 1 cup
Patato 2 boiled
Bread 2 slices
Salt 2 tsp [ 1 for matara and 1 for tikki ]
Haldi 1 tsp
Onion 1
Oil for frying
Green corriander chutney and sweet tamarind chutney
METHOD
1 Soak matara overnight or in the morning to cook in the evening
2 Boil matara with 1 tsp salt and 1 tsp haldi and 2 glass of water in pressure cooker with 1 tsp oil .Keep them on for 5 mts on high flame then 5 mts on slow flame.
3 Cut onion and tomato in very small pieces.
4 Mash boiled potatos mix with bread slightly soaked in water Mix 1 tsp salt init
5 Shape potato mixture into round 2 inches size tikkis
6 Deep fry them on high flame if tikki is spilling in oil put 1 bread piece more to potato mixture then fry
7 Now spread matara in abroad plate put 1 tsp each of both chutneys .Keep tikki in centre of matara put both chutneys again .Put small pieces of onion and tomato on tikki
8 Sprinkle some bhujia on top if you have it
