EASY RAJMA
Rajma is our day to day meal . It is made in different ways . But we make rajma very easy , tasty and simple . Generally we soak rajma overnight and then cook the next day . But we soak the rajma differently . For this we wash and put rajma in a cooker with water in good amount to rajma to soak properly and whistle just once and switch off the gas. Don't open the cooker for 1 hour . After an hour rajma gets soaked . This way rajma is soaked in just 1 hour . We soak little chana dal also with rajma , It makes rajma more tasty.
COOKING TIME 1 hour [ soak overnight or boil for 1 whistle for soaking ] SERVES 6
INGREDIENTS
Rajma 2 cups
Chana dal 2 tbs
Tomato 2 big , onion 2-3 small , garlic 10-12 cloves , ginger 1' piece [ onion , garlic is optional ] , 1tbs ghee , 1tsp cummin seeds , 1/2 tsp red chilli pwd , 1/3 tsp hing for tadka , 1tsp lemon juice
METHOD
Soak rajma . For this wash rajma , chana dal and put them in a cooker with enough water. After 1 whiste switch off the gas and open the cooker after 1 hour only .
Cut tomatoes ,onion , garlic and ginger , all cut in pieces .Make paste in mixie without water, mixing everything together.
Open the cooker , rajma , chana dal are soaked . Add the paste of tomato , onion , garlic and ginger to the soaked rajma , chana dal . Add salt and 1 tsp turmeric powder . Put 3 glasses of water in it .
Keep the cooker on high flame. After 6-7 whistles keep the gas slow . Switch off the gas after keeping the cooker for 7-8 minutes on slow gas .
Let the steam cool off . After 10 minutes open the cooker . Add 1sp lemon juice and mix well . Mash 2tbs cooked rajma with the kadchi so that gravy gets thickened. You can add 1 tsp chat masala also .
Make a tadka of 1 tsp cummin seeds with 1/2 tsp red chilli pwd and 1/3 tsp hing in 1tbs ghee . Mix the tadka in rajma .
Rajma is ready to serve with rice or roti .
