PURI ALOO
On every festival we make puri aloo. This is most tasty , healthy and filling food. Puri does not absorb much oil. Potato vegetable is easy and quick to make.

INGREDIANTS
For aloo vegetable
Potato 4 [boiled ]
Tomato 2 [cut in small pieces or grated ]
Ginger small piece grated , green chilli 1 [optional ] , corriander leaves optional , water as required ,oil 1tbs , hing
Salt 1 tsp , red chilli powder 1/2 tsp , dhaniya powder 1 tsp , haldi powder 1/2 tsp , cummin seeds 1 tsp
For puri
Wheat flour 2 cups , water as required
METHOD
- Put 1 tbs oil in pan . When it is hot put cummin seeds and pinch of hing, when it starts to crackle , mix ginger, green chilli in it.
- Now put haldi and red chilli powder as colour of sabji turns good . Add tomatoes and fry for 5 minutes.
- When it starts leaving oil ,add boiled and crushed potatoes . Mix well and add salt and corriander powder.
- Fry for 2 minutes, add water as required for gravy . Boil for 5-7 minutes till masala is mixed with potatoes.
- You can add 1/2 lemon juice too according to your taste. Switch off the gas and sprinkle corriander leaves .
- For puri knead wheat flour with water little hard and keep aside for 15 minutes.
- After 15 minutes knead again very well for 5 minutes .
- Heat kadai with enough oil . Make small balls of flour with the help of little oil on your hands.
- Roll each ball about 4 inches in diameterand when the oil is very hot put 1 by 1 round in oil. When it pufs up turn upside down ,fry from other side .
- Crisp it according to your taste .
