CURD RICE
Curd rice is a tasty south Indian dish which is cooked with precooked rice , curd and tempering spices .Traditionally curd rice was consumed regularly during summers to prevent sunstroke and beat the summer heat . Curd is considered as anatural coolant and brings down body temperature .If you suffer from acidity then this soothing bowlful is more than tasty , it is nothing short of ambrosia for you . When enforced with carrot and cucumber , the curd rice gets all the more pleasing for your stomach . Curd rice is also offered in temples , after offering the deities , distributed as prasadam .It can be prepared instantly in short amount of time with very little effort . Make sure that the curd is added when the rice is cool otherwise the curd will curdle .
COOKING TIME 30 minutes SERVES 4
INGREDIENTS
Rice 1/2 cup
Curd 1.5 cup
carrot 1/2 cup grated , cucumber 1/2 cup cut in small pieces , milk 1/3 cup
For tempering
sarson 1 tsp , urad dal 1/2 tsp , chanadal 1/2 tsp , kadi patta 4-5 , green chilli 1 slit from the centre , oil 1tbs
METHOD
Wash and rinse rice for 15 minutes .
Boil rice with 1.5 cup water in a pressure cooker . After 3 whistles and 2-3 minutes on low flame, switch off the gas .
When the pressure has come down , open the cooker , add 1/3 milk and mash the rice with a masher .
Let the rice cool down completely . Grate carrot and cut cucumber in small pieces .
Add curd , salt , grated carrot and cucumber . Mix well .
Make a tempering with sarson , urad dal 1/2 tsp , chana dal 1/2 tsp , kadi patta 4-5 , green culli 1 slit , in 1 tbs oil .
Pour over the curd rice . You can sprinkle pomegranate while serving too . Chill and serve .
