PRESERVING MANGO PANNA
Mango panna is a cooling summer drink made with raw green mangoes which should be consumed daily in summers . Mango panna is slightly sour and sweet to taste and is flavoured with roasted cummin pwd , black salt and pinch of black pepper and you can sprinkle some mint leaves while serving . It is refreshing and prevents the body from getting heat stroke . aam panna helps in preventing stomach problems in the summers . Raw mangoes are rich in vitamin c and iron .It is rich in various acids which helps to fight against bacterial diseases .
COOKING TIME 30 minutes
INGREDIENTS
Raw mango 3 small or 2 big
Sugar 2 cups
salt , cummin seeds pwd 2 tsp , black salt 1 tsp , pinch of black pepper
METHOD
- Peel the mangoes and cut the mangoes in small pieces . Mix 1/2 glass water to the pieces in a kadai and boil the mango pieces till they are tender . It takes 7-8 minutes till they become little mushy . Switch off the gas and let it cool .
- In a separate open pan put 2 cups sugar with 1/2 cup water . [ Add 3 cups sugar if you have cut 3 big raw mangoes ]
- Boil sugar with water till sugar is dissolved .
- Blend the mushy raw mango in a mixie . Mix with the sugar syrup and boil . Mix well .
- Add salt , cummin seeds pwd , black salt and boil for 5-6 minutes on meduim flame . Add pinch of black pepper .
- Switch off the gas and cool .
- Store in a clean jar and keep in fridge .
- While serving put 2 tbs of concentrate in a glass and add cool water. Mix 1/3 tsp cummin seeds pwd , 1/4 tsp black salt . Stir it well . If you find small lumps of concentrate at the bottom of the glass after mixing water , seive in a tea strainer .
- It can be preserved for a month in the fridge .
