ATTA PAPADI CHAT
This is the famous and oldest chat which we are used to eating at home or in any party. Generally it is made with maida, in the market also you get readymade papadi packet made with maida only. But i make with atta only as it is healthy and it is as delicious as maida papadi.

INGREDIENTS
Atta 1/2 cup
Suji 1/2 cup
Oil 1/4 cup
Curd 6 tbs Sweet chatni 3 tbs
Salt 1 tsp ajwain 1/5 tsp water as per need potato 2 boiled and mashed chat masala as per taste
[little bhujia or sev , green chutney , boiled chana ] optitional
METHOD
1 Mix atta ,suji,salt ,ajwain and oil in a bowl.Add little water to make medium hard dough . Keep aside for 15 minutes .
2 Roll again the dough and make very small balls with it. Roll each ball in 2-3 inch circle thin. Prick each round with a fork on both the sides so that they don't get puffedup .
3 Warm oil in kadai and when it is medium hot fry 10-12 at a time .It takes 3 minutes to make it light brown. Don't make on high gas , it should be either slow or medium. Cool it and keep in a jar.
4 For preparing chat , spread 4-5 papadi in a plate, put mashed potato on it, if you have boiled chana put 1 tsp chana, sprinkle salt, chat masala over it. Put 2 tbs of whisked curd mixed with little salt ,then 1 tbs of sweet chutney and serve. If you want to add 1tsp green chutney and bhujia or sev you can do on top of the chat papadi .
