VADA PAO [ vedio is at the bottom ]
Vada pao os a desi form of hamburger . It is a maharashtrian dish but it is popular in north india also . You can make garlic chutney and put in the pao with the potato vada . You can mix garlic in grinding the green corriander chutney in mixie also .
COOKING TIME 30 minutes SERVES 4
INGREDIENTS
Potato 4-5 [ boiled ]
Besan 2 cups
Garlic 8 cloves [grated ] , ginger small piece , green chilli 1 cut in small pieces , kadi patta , salt , haldi , sarson , oil for frying
METHOD
Boil potatoes and grate them . Grate garlic and ginger. Cut green chilli in small pieces .
In 1tbs of oil add sarson . Mix kadi patta and green chilli . Add ginger garlic grated . Lastly add grated potatoes with salt and haldi .
Roast for 2 minutes and switch off the gas . Make round balls with the mixture after cooling down .
Mix water in besan to make pakora type consistency . Mix salt , red chilli powder , ajwain and hing .
Heat oil in kadai and put poatato ball dipped and covered from all sides in besan mixture in the hot oil in kadai . Fry till golden brown on medium gas .
Fry all potato mixture balls .
You can make garlic chutney by mixing 1/2 cup grated coconut [not fresh but dried ] , I/2 cup garlic cloves and few red chillies or red chilli powder [ according to your taste ] in mixie . { this chutney is optional ]
Now take 1pao slit from the centre , roast on nonstick tawa with butter or oil . Put one side green chutney [ or green chutney mixed with garlic ] and coconut garlic chilli chutney on other side .
Keep hot potato vada in the centre of both the chutney in pao .
