MULTI DAL STARTER
Dals are an indispesable part of Indian lunch and sometime with other meals also . Moong dal chilka is said to be tridoshic and can balance any disturbance in the body. Chana dal has a very low glycerin index and is suitable even to those with diabetics . Urad chilka and kali massor are full of fibre and very nutritious . So combo of all four dals is the healthiest form of vegetarian food .
COOKING TIME 1 hour [ 1/2 -1 hour for soaking ] SERVES 5
INGREDIENTS
Moong chilka 1/2 cup
Urad chilka 1/2 cup
Chana dal 1/2 cup
Kali masoor 1/2 cup
Salt , red chilli pwd , haldi , oil for frying
METHOD
- Soak moong chilka and urad chilka together for 1/2 - 1 hour. Soak chana dal and kali masoor together for 1/2 - 1 hour .
- After 1 hour Make paste of moong chilka and urad chilka with green chilli and 2 tbs corriander leaves in mixie with very little water .[ green chilli and corriander leaves are optional ].
- Make second paste of kali masoor and chana dal in mixie adding very little water. Add 1/2 tsp turmeric in mixie while making paste .
- Add salt and red chilli pwd to both the pastes . Now we have to steam them . You can steam in idly maker or in a steamer or in a open pan . It takes little longer in pan .
- For steaming in a pan coat the utensil with oil. Pour chana dal , kali masoor dal paste in it , then pour moong chilka urad chilka paste over the previous paste .
- To steam in a pan or kadai , pour 2 glasses water in kadai , put a jali over it , keep the utensil to be steamed over the jali and cover the kadai . It takes 20- 25 minutes to steam . Check the water while steaming , if it has evaporated put more water .
- You can steam in idly maker by coating the sections of idly stand with oil and pouring the same way. It takes little less time to steam .
- After 2 0 -25 minutes check by putting a fork . If it has come out clean then it is done . Switch off the gas . Let it cool for 10 minutes . Take it out from kadai , idly maker or steamer and cool it for 15 minutes.
- Loosen it from the sides with a knife and turn the vessel over and tap it on the bottom . It comes out clean . It is easy to take out from idly maker with the help of a knife .You can see the 2 colours on the sides .
- Cut them in pieces . Now you can roast them with sarson and kadi patta in a non stick pan with 2 tbs oil or deep fry them .
- You can freeze the pieces in the freezer and roast or fry them after defreezing when you want to serve .
