URAD DAL KACHORI [ 2 vedios are at the bottom ]
Kachori is a tasty flacky snack which can be eaten any time. My eldest sis in law taught me 5 years back to cook kachori. Right from that time my kachories are a treat for everybody. They can be kept for 1 month with the same taste and very crispy. It is made in 2 process .First its filling of urad dal then kachori .I always make filling first and keep in ziplock in fridge. They can be kept for 6 months. Take out some masala and make fresh kachori.
FOR MASALA
Urad dal 1 cup
Sarson oil 3/4 cup
Salt, red chilli powder, dhaniya powder , haldi 1 tsp each [as per taste]
Saunf pisi 2 tsp [optional ]
Hing 1/3 tsp
METHOD
1 Soak urad dal for 2 hours. Grind it in mixie preferably without water or with 1-2 tbs water.
2 In a heavy bottom kadai mix the dal with half quantitry of oil. Keep it on slow gas .Keep stirring it .This will be little sticky but have patience and keep stirring . Keep on adding rest of the oil too .
3 This will take about 35 to 40 minutes to roast the dal .The colour will change to brown and little danedar
4 Mix all the masala salt ,haldi, dhaniya powder,saunf powder,red chilli powderand hing. Roast 2 more minutes.
5 Cool it and store it in fridge,
FOR KACHORI
Maida 2 cup
Oil 1/2 cup
Salt 1 tsp
Water 3/4 cup [as required ] warm
METHOD
1 Mix salt and oil in maida. Mix it well for 3-4 mts .Mix warm water slowly to see its cosistency. It should not be very hard.
2 Now make balls of this dough the size should be like puri . Keep 1/3 cup water mixed with pinch of hing there only.
3 Roll each ball 3 inches round ,keep 1/2 tsp masala in the centre .With that water coat the outer side of round. This helps in sticking the dough with the masala in the centre
4 Fill all the balls with masala.
5 N ow roll each without pressing much into 2-3 inches round.
6 Heat oil in kadai ,It should be slow .Put about 7-8 rounds at a time.Gas should be very slow.
7 Each round will take 20-25 minutes.Keep turning them upside down. They should be light brown in colour .
ENJOY KACHORI ..IT CAN BE STORED FOR A MONTH.
