Matar kachori is a tasty , crispy snack which can be enjoyed any time of the day . The filling of matar is almost same as matar samosa . Only cashewnuts and raisins are not mixed with the masala . It can be kept for 3-4 days so they are good for travelling also . In winters when you want to eat something tasty this is one of the best snack .
COOKING TIME 45 minutes SERVES 6
INGREDIENTS
Peas 1cup
Maida 1 cup , oil 1/4 cup , salt , water
Salt , red chilli powder , dhaniya powder , pisi saunf , oil for frying
METHOD
For filling
- Crush peas in mixie . Do not make paste , only whisk for 2-3 times so that peas are little broken .
- In a non stick pan roast crushed peas for 7-8 minutes on slow or medium gas . Add salt, red chilli powder , dhaniya powder and 2 tsp pisi saunf . [pisi saunf is optional ]
- Roast for 1 minute more and switch off the gas . Cool it .
For kachori
- Mix 1/4 cup oil in 1 cup maida and salt . Oil should mix very well in maida . It will become little coarse . After 2 minutes add hot water to make the dough . Dough will be like puri atta but not hard .
- Take little dough , make 3' round , coat water with finger on round corners . Put 1 tsp matar mixture in the centre and cover it from all sides .
- Roll again and make 3' round without pressing hard so that matar doesn't come out while rolling the dough .
- Roll 6-7 rounds with the dough. Heat oil in kada and when it is medium hot , drop all rounds in oil and simmer the gas .
- Fry on sim gas for 20 minutes from both the sides . Take out on paper napkin .
