Fried Rice

1 cup white rice, cooked and cooled

1/4 cup soy sauce

2 scrambled eggs (which I skip sometimes)

1 cup frozen peas

1-2 grated carrots

4 chopped green onions

4 cloves garlic

1 cup chicken (if you like, or any other meat), cooked and diced

olive oil for cooking

Cook eggs first and set aside. On high heat, fry veggies in 1 tsp of oil for about 1 minute (this is really to taste, I like more tender veggies so I cook them longer). Remove from heat. On high heat, fry rice in 1 tbsp soy sauce and small bit of soy sauce for another minute. Add 1/4 cup soy sauce and stir until mixed and rice is dry. Add veggies and eggs. Add meat and mixed in.
